What do you get when you combine the work of a local artist, a skilled artisan baker, and your favorite coffee shop? An exclusive pop-up bagel brunch at The Corner Cup. We’re so excited this artistic duo, Will Manning and Lazy Lady Baking Co., are teaming up with The Corner Cup to bring their mouthwatering, hand-shaped bagels to Jonesborough, yet again!

These bagels are the real deal, the kind that are hand shaped and proofed overnight, boiled in the early morning while most of us are still fast asleep before being baked to a brown luster, and served oven warm with a dollop of cream cheese. If you were to ask one of our favorite Corner Cup baristas, Anna Floyd, what her favorite combo is, she’d say,

“The everything bagel with house-made veggie herb cream cheese served with a latte is my ultimate breakfast!”

Here’s a Little More Info About The Team:

The Corner Cup

Known by locals as “Jonesborough’s living room”, The Corner Cup provides the perfect place to relax, while providing patrons with locally roasted coffee and some of the best-baked goods around. Each individual order is carefully crafted with love by their trained baristas in order to provide the perfect experience.

The Mountain Harvest Kitchen

Jonesborough and East Tennessee as a whole are known for their love of local food. And The Mountain Harvest Kitchen knows a thing or two about that. Located in Unicoi, they became the home kitchen for five local food businesses while providing food education classes. Created with the vision of inciting new business and invigorating interest in local food, The Mountain Harvest Kitchen’s mission is to bring uncommonly fresh food to a larger table, all while connecting regional entrepreneurs.

Lazy Lady Baking Co.

Then there’s the sweet side of things, Lazy Lady Baking Co. What has now become a Tri-Cities favorite, launched from The Mountain Harvest Kitchen in 2018 selling at regional farmers markets and local coffee houses. Owner, Maren Close, attended culinary school in Asheville before moving to work in some of the country’s most influential bakeries in San Francisco. Her scones and quiche also rotate weekly at The Corner Cup and feature expertly paired seasonal flavors like sweet corn, roasted peppers, and goat cheese crumbles.

Heartwood Forge

When Will Manning, a nationally celebrated culinary knife maker and owner/founder of Heartwood Forge, met Maren, the two instantly formed a natural bond through their mutual respect for the culinary craft. Both Will and Maren pride themselves on using locally sourced materials/ingredients.

What may seem an unlikely team, they have enjoyed the creative collaboration and simple pleasure of putting their hearts into the culinary craft. Mark your calendars and bring the entire family on a culinary excursion.

“What makes the quality of pastries is the ingredients,” Maren explains “and forging relationships with local producers that care as much about their craft is an important part of my business.”
